Pinch of salt
1 tsp vanilla extract
300g plain flour
2 tsp baking powder
100ml sunflower oil
200-300g of any fruit
For example, lightly stewed blackcurrants with sugar.
Chopped raw apples or pears with a teaspoon of cinnamon.
Bramley apples and raisins.
Raspberries, blackberries or blueberries.
A Czech recipe using sunflower oil instead of butter, with the addition of fruit to the top.
Pre-heat the oven to 160ºc fan or Gas mark 4.
Grease a large oven tray with oil.
Separate the whites from the yolks of the eggs.
Whisk the egg whites to a soft peak, with a pinch of salt.
Add the sugar gradually and mix until combined.
Add the vanilla extract and the yolks to the mix.
Stir in the flour, baking powder, sunflower oil and water.
Pour mixture into the tray.
Sprinkle the fruit over the cake mixture.
Bake for 20-30 minutes.
Ideally served alone or with natural yoghurt.
Also freezes well for future eating!
